Peas are one of the oldest cultivated crops. Although perfected by the British, pea seeds were found in an Egyptian tomb at Thebes. There is nothing like the flavor of freshly picked peas and they are also powerhouses of nutrition. Peas are starchy, but high in fiber, protein, vitamin A, vitamin B6, vitamin C, vitamin K, phosphorus, magnesium, copper, iron, zinc and lutein.
