The tomatillo (Physalis ixocarpa) is a plant of the nightshade family, the same family as tomatoes, eggplant, etc. Tomatillos originated in Mexico and are the key ingredient in fresh and cooked Mexican and Central American dishes. The tomatillo is also known as the husk tomato, jam-berry, husk cherry or Mexican tomato.Its fruit is surrounded by an inedible, paper-like husk formed from the calyx which splits open at harvest. Ripe fruit is firm and bright green, as the green color and tart flavors are the main culinary contributions to cuisine, such as salsa verde, gazpacho, and guacamole. Like their close relatives cape gooseberries, tomatillos have high pectin or fibre content, known for health benefits when consumed.Ripe tomatillos will keep for over two weeks if the husks are removed and the fruits are placed in sealed plastic bags stored in the refrigerator.
